天然色素使用的原則：
  上對天然色素的管理并不很嚴(yán)格，在色素的使用上，只要記著三項(xiàng)原則即可暢行無阻，這三項(xiàng)原則為（１）選用所廣泛認(rèn)可的天然色素；（２）對各國所認(rèn)定可以進(jìn)行調(diào)色的食品進(jìn)行調(diào)色；（３）對食品進(jìn)行調(diào)色時(shí)所添加的色素量應(yīng)低于zui高含量的管制。例如甜菜根抽出物在瑞典是允許使用的天然色素，但是卻僅允許使用于特殊食品中，如糖果、面粉、糕餅及食用糖衣中，其使用量也有所限制，在食用糖衣中的用量不得超過２０毫克／公斤（以甜菜紅計(jì)）。
